Easy Vegetarian Meals to Prepare at Home

Easy vegetarian meals - veggie burgerAs we read in last week’s post, there are so many benefits of a vegetarian diet!  Some of those benefits include:  overall improvement of your health and a lower grocery bill!  Even just keeping those two benefits in mind (although there are countless others) are reasons enough to at least try to go meatless with your meals a few times a week.  There are actually many easy vegetarian meals that are both healthy and quick to make.  Let’s take a look at look a few popular and simple vegetarian meals.

Oatmeal Yogurt Pancakes

While on the hunt for some easy vegetarian meals, I discovered this gem!  I actually already serve my family oatmeal pancakes, but by adding yogurt it adds that extra something special to this easy vegetarian breakfast.  Skip that sugary syrup and opt for fresh blueberries, raspberries, or strawberries.  This oatmeal yogurt pancake recipe will have everyone at your table asking for more!

Pita Tacos

Great for either a lunch or a dinner, pita tacos can be made based on what you like to eat.  Stuff your pitas with roasted red peppers, mushrooms, grilled onions and avocados and your meal is ready!  Add some low-fat cheese and some salsa and your mouth will be thanking you for this no-cook fast and delicious vegetarian meal.  For a variation, you could even make a pita salad.  All the fixing you would use in a salad: shredded carrots, lettuce, tomatoes, cucumbers, and such, just place inside your pita, add your favorite dressing and you have a perfect on-the-go healthy salad!

Avocado, Lettuce and Tomato Sandwich

Much healthier than its bacon, lettuce, and tomato counterpart, the avocado, lettuce and tomato sandwich is an easy no-fuss vegetarian meal.  Toast your whole-wheat or whole-grain bread, add your sliced avocados and tomatoes, add your lettuce and voila your sandwich is ready!  If you like cheese, go ahead and add a slice of low-fat cheese to compliment your sandwich, otherwise maybe just spread some mild mustard on it.

Vegetarian Chili

This vegetarian chili could be a great starter for any meal, but could also stand alone as a meal all by itself!  No better way than to warm yourself up than with these delicious flavors!  Again, just like most meals you make yourself, you can adjust the recipe to your liking.  If it is too spicy, feel free and drop the amount of dried chili peppers.  If you want to kick it up a notch, throw some more in.  It is a great way to use up some of your pantry items as well.  Here is a healthy and easy vegetarian chili recipe provided by Planet Green.

In the mood for something a little heartier?     I actually make something similar to pita tacos with mushrooms and peppers that have with some taco seasoning. I also add some avacodo, salsa and a jalapeno because I enjoy it spicy. These are some great ideas for vegetarians. Just be sure to get your proteins in if you are working out.

    Hey Chantel. I had a quick question for you. I am working with a new personal training client who is a ‘raw vegan’. I have met vegetarians and I have met vegans, but this is the first time as a personal trainer I have worked with a ‘raw vegan’. Do you have any recipe ideas for a raw vegan that have good sources of protein in them.

    Really useful post, thanks for the great information and vegan tips. I have many friends who are vegans and struggle with their diet, but referring this to them will help them get back on track. The pita tacos look particularly appetizing for even a meat eater!
